A flight would most certainly suit your baby better, in terms of safety, comfort, and convienence. Trains in China are a very big hassle, and considering the large amount of people using them, a plane would be a much better consideration. From Guangzhou you don't have to transfer, but it still takes ~28 hours. I would recommend air travel. If you can read Chinese, try the link below.
